Just Another Manic Monday

Okay, it hasn’t been exactly manic, but it has been foggy and a bit dreary outside. I feel like I’m in an Edgar Allan Poe poem, and I’ve been drinking London Fogs like my life depends on it. I know it’s probably super lame to open this blog post by talking about the weather, but the atmosphere is kind of romantic in a way, with all of these low-hanging clouds. The mud from all of the melting snow isn’t quite romantic, but I do love those skies.

During class, I was stifling tummy growls. Those are always fun, aren’t they? When you’re sitting in a silent classroom, hunched over, and pleading with your super hungry belly to stay quiet for twenty more minutes. That was me this afternoon. I was downing water like mad, attempting to save myself the embarrassment, and when I got home, I went to town on some pitas. Not one pita, my friends, but two – piled high with fresh veggies, feta cheese, and olives. Oh, my gosh, I was in food lover’s heaven.

I used:
-Fresh greens (any kind of greens you like will be fine)
-Kalamata Olives
-Feta Cheese
-Tomato
-Cucumber
-Mushroom
-Anaheim Pepper
-A little bit of Ranch (I didn’t have any cucumber sauce.)
-Pita Bread

Throw it all together, and you’ve got the perfect lunch. Easy to make and healthy, too! I had some berries on the side, because I eat berries the way the Cookie Monster eats cookies. Give me ALL of the berries! These are the kinds of meals that make me want to become a vegetarian, again, so badly. It’s certainly something to ponder, at least.

Tomorrow is a super exciting day for our family! My aunt will be heading to the hospital to welcome her fourth baby, which means that I will be a cousin, yet again! I’ve got my money on it being a girl, so we’ll see. I’ll be on pins and needles all day, waiting for the first picture. I’m sending her all kinds of love and positive energy, and I can’t wait to meet the newest little one in our growing family.
